“About four years ago, we established the association with the aim to protect and preserve our rural lifestyle and our traditional products, primarily the Gacko kajmak from the sacks. Last year we successfully secured (for the kajmak) the protected label of origin, which is the highest (original) product designation in our country. As I said, it still hasn’t been fully four years since we established the association and at first, we had nine founding members, but as time went by, new members kept joining so that right now we have 26 members.”

“We make the sacks from cow or sheep skins. Elsewhere, people use goatskins as well, but we don’t. When we slaughter a sheep, for example, we wash and shave its skin and then we shape it into a sack and dry it. Once dry, the sacks can be used to age kajmak, the Gacko kajmak, and cheese in them.”

“I am a member of the association and I have known some of these women for a long time and some I have met just recently, but we’ve built a great community, we get along really well and we are never jealous of each other’s sales or anything like that, sometimes we even sell to one another. We respect and love one another a lot and we travel everywhere together.”

“Our products always stood out; I am not bragging, I am simply stating the facts. And since some 15 years ago we have been acquiring (appliances) that make the process more convenient.”

STORYLINE:
Farming animals for food has long been an integral part of life in this rural region around Bosnia’s southern town of Gacko.
But there is one particular dairy product that is special to this place: cheese.
The thick, fatty spread is known locally as Gacko kajmak.
The earliest record of it dates back to 14th century merchant contracts kept in the archives of the Ragusan Republic in Dubrovnik.
And yet, nowadays, it is only well known and sought-after in certain parts of Bosnia.
And a group of women from the area want to change that.
“About four years ago, we established the association with the aim to protect and preserve our rural lifestyle and our traditional products, primarily the Gacko kajmak from the sacks," says Dragana Milovic, president and one of the founding members of the Gacko Kajmak Producers Association.
"At first, we had nine founding members, but as time went by, new members kept joining so that right now we have 26 members.”
The cheese is made of cow milks and aged in animal skin sacks.
Milovic has a small building dedicated to the process.
