4. SOUNDBITE (English) Bonnie Broussard, chef, World Fraternity of Knights of the Giant Omelette, Abbeville:
"We have already cracked 10, 000 eggs and we will cook the first batch of eggs and serve it free to the public. In the omelette here they put pieces of bacon and green chives whereas in our omelette in Abbeville we put raw fish. So every giant omelette area has its own omelette recipe. But we all do the same thing, we cook a giant omelette."

"We were just on a small trip and we noticed that there was a fabulous tradition here. A giant Omelette so we thought why not attend and have a great omelette?"

STORYLINE:
A marching band signals the event run by the World Fraternity of Knights of the Giant Omelette is about to begin.
It’s the 29th year of the festival and it’s growing in popularity.
An old proverb says you can’t make an omelette without breaking eggs and that’s exactly what’s happening here.
Once everyone is in position a massive egg cracking session gets underway.
Today 10,000 eggs will be needed to feed the hungry 5000 strong crowd who are delighted by the colourful spectacle.
There are so many eggs a special giant whisk is brought in.
Soon enough the giant pan is oiled and the bacon is beginning to sizzle, the point at which the appetites here are whetted.
Chef Bonnie Broussard is from the Abbeville chapter of the World Fraternity of Knights of the Giant Omelette and she actually reveals there’s more than one omelette being cooked here but they all come in different flavours.

Visitors who’ve stumbled upon the event are clearly delighted.

At last the eggs hit the massive pan and the omelette is on its way.
Finally the hungry crowd get what they’ve waited so patiently for.
And the chefs start the see the bottom of the pan as more and more plates are handed out.
