"The business plan was very, very simple, just once sentence. Everything has to be Instagramable and that’s been my go to business plan for all my restaurants for the last six years. I’ve been doing restaurants that wherever you are in the restaurant you are engaged to take a picture, take a video, and share it with your friends. That’s my best way of communicating, which is the new way that we call the word of mouth, that’s the new way of telling everyone go there, it’s amazing.”

"It’s been the case of humanity which is adapting. I saw how the power of pictures and videos were taking more and more space in the life of everyone. You can see everybody’s like looking at their phones constantly and they live life though the phone more than their own eyes now. And so with this statement, I saw that I had to use this powerful tool which is the smartphone and the people are coming to spread the word of my restaurant and doing that I was pushing them to engage them taking pictures and videos.”

"You want people to take pictures of your space that’s how it works in the 21st century you know. People take more pictures and spend more time on the phone, which I don’t like personally, than eating, you know. What I don’t like as well, but this is the way it is people doing that with the flash. I work so much on creating a vibe by having the right lighting. I’m really into lighting, dim lighting and people come with the flash all the way and don’t even pay attention to the space anymore.”
